Stefano Bonilli ha iniziato la carriera come giornalista politico e sindacale, poi ha pensato bene di fare dell’altro ed è diventato giornalista ed editore nel settore enogastronomico. Ha abbandonato la sua Olivetti 22 per un Mac ed era il 1987. Da allora ha cambiato mille computer ma mai la Mela. Usa Kindle DX attendendo l’iPad. Per dieci anni è stato giornalista del Manifesto seguendo come inviato i principali eventi politici e sindacali. Nel 1986 ha fondato il Gambero Rosso che ben presto è diventata la più importante casa editrice di periodici e guide dedicate al cibo e al vino. È stato direttore del mensile Gambero Rosso dal 1986 al 2008. Nel 1999 ha creato e diretto fino al 2008 il primo canale televisivo europeo dedicato alla gastronomia, Gamberorosso Channel, prima sulla piattaforma Tele Più e poi su Sky. Nel 2002 ha ideato e realizzato a Roma, sulle rive del Tevere, la Città del gusto, struttura multimediale totalmente innovativa, con studi televisivi, scuole di cucina, il teatro della cucina. Ha lavorato per tre anni, nel 1984-85-86 nella redazione di Di Tasca Nostra, ha curato per due anni la rubrica dei ristoranti sul Corriere della sera edizione di Roma e scritto per Europeo, Panorama, Wired. Attualmente dirige la collana Cucinare insieme dell’editore Giunti ed è consulente della casa editrice Giunti per l’enogastronomia. Tutti pensano che mangi sempre bene e invece spesso, per motivi di lavoro, si nutre di panini.

Stefano Bonilli was a journalist for ten years for daily Il Manifesto reporting political and union events. In 1986 he founded Gambero Rosso which soon became the most important publishing house for food&wine periodicals and guides. He was editor of monthly Gambero Rosso from 1986 to 2008. In 1999 he created and directed, until 2008, the first European gastronomy television channel, Gamberorosso Channel, first on the Tele Più platform, then Sky tv. In 2002 he created la Città del gusto in Rome, on the Tiber banks: an innovative multimedia structure with tv studios, cooking schools, cuisine theatre. He worked for three years in 1984-85-86 writing for Di Tasca Nostra, he spent two years on the restaurant review columns for daily Corriere della sera Rome edition, and he also collaborated with Europeo, Panorama, Wired. He currently edits the Cucinare collection for Giunti publisher and is also their food&wine consultant. Everyone thinks he always eats well, but for work reasons he ends up eating mostly sandwiches.
